Kashmiri Pink Tea, traditionally known as Noon Chai, is produced from selectively harvested tea leaves (Camellia sinensis) that undergo prolonged oxidation and controlled alkaline treatment using mineral salts. This biochemical process alters polyphenol structures, allowing the infusion to develop its characteristic pink coloration when aerated and milk is added.

Unlike green or black tea, pink tea requires extended boiling and manual oxygenation, triggering anthocyanin–polyphenol interactions responsible for its color transformation.
